Matcha Lavacake - the best matcha cake?

According to our ultra-simple matcha cake recipe, the Matcha Lavacake is perhaps a little more elaborate, but still easy to prepare and perhaps even a little tastier. And that moment when you cut into the matcha cake and the inside of the cake oozes out in delicious green - it's well worth the extra effort. The base is our high quality Matcha N°1 - but you can of course also take a comparable Matcha.

Ingredients

1.5 tablespoons Matcha N°1
200g white chocolate
200g butter
3 eggs
70g sugar
50g flour

Preparation

Melt the chocolate in a water bath. Then remove from heat and stir in the butter. Put the eggs and sugar in a bowl and beat until a white foam appears. Add the melted chocolate and stir in the flour. Mix the matcha with a little warm water and add it.

Divide the mixture among four individual, well-greased ramekins. Bake in the preheated oven at 200°C top/bottom heat (convection oven: 180°C) for about 10 minutes so that the matcha cake is firm on the outside but still nice and liquid on the inside.
