Matcha cake simple - the only recipe you need
In our blog article on the many ways to prepare matcha, we have already shown how versatile matcha can be. I like to drink matcha prepared according to the classic Japanese method. I almost prefer to eat it as a dessert. Since I'm not really good at baking, I've been looking for a long time for a recipe that is simple, easy to succeed and only needs a few ingredients that almost everyone already has at home. After much trial and error, the following recipe came about and has since become our standard.
What do you need for the matcha cake?
1 cup** sugar
50-75g melted butter
1/2 cup** milk
2 eggs
1 cup** flour
1.5 tablespoons good matcha powder*.
1 teaspoon baking powder
good pinch of salt
*We recommend our Matcha No.2 for those who like it extra sweet. If the cake should be a little more balanced, we recommend to use the Matcha No.1.
**For the cup, we use a regular sized coffee cup.
How to prepare the matcha cake?
Preheat the oven to 160 degrees. Put the sugar, melted butter, milk and eggs in a bowl. Whisk everything with a mixer until nice and even. In a second bowl add flour, matcha powder, baking powder and salt. Mix with a whisk. Here you should make sure that the flour and matcha are mixed well, so that later an even dough is formed.
Now we slowly add the flour-matcha mix to the first bowl while stirring with the mixer. Again, everything should be mixed nicely with the mixer until a smooth dough is formed. We then pour the batter into a greased mold. We used a glass mold, but a regular loaf pan or muffin tin will do.
Place the pan in the preheated oven and bake for 45-55 minutes until the matcha cake is brown on the outside. Check whether the cake is ready with a toothpick. Carefully poke the toothpick into the cake and pull it out again. If no batter sticks to the toothpick, the cake is done. Remove the cake from the oven and let it cool. Caution: Do not cut too early, otherwise the cake may collapse.
