Yama no Kaze means “mountain breeze” and captures the fresh, floral aroma of this unique Sencha green tea. Subtle sweetness, notes of wild herbs, and a clear, long-lasting finish with distinct umami reflect the special production process of this green tea: after harvesting, the tea is left to mature overnight in bamboo baskets over mountain spring water to develop its unique aroma, reminiscent of the floral notes of a light oolong tea. This type of Sencha is also called “Kaori Ryokucha” because of its floral aroma (香り/Kaori). A hand-picked Sencha green tea specialty with a unique character, highly aromatic flavor, and airy freshness.

Message from the tea farmer

To bring out the full aroma, I left the freshly harvested leaves to wither overnight in bamboo baskets. Zairai trees - each one grown from seed - have their own unique character. While they are difficult to grow and produce very low yields, they offer a rich and deeply complex flavor that cannot be imitated. This tea is not grown commercially, but is part of my life's work - a continuous pursuit of purity, identity and personal expression through tea.

Floral and aromatic

The combination of wild Zairai bushes and maturation over mountain spring water creates a very special aroma: fragrant floral notes, aromas of wild herbs & an intense freshness. Incomparable in aroma & taste and quite different from conventional Sencha green teas.

A passion for tea growing

Susumu San quit his job as a manager at a large tea company in 2023 to pursue his passion for growing & selecting green tea. He bought an abandoned tea farm in Kawane and now uses his knowledge & years of experience to produce his own tea. He does not use any pesticides, herbicides or chemical fertilizers.

Harvesting by hand is very laborious, but produces an exquisite green tea of the highest quality.
